This is my first official posting on my new blog. I am back home in Florida from school at The Culinary Institute of America. As soon as I am back its non-stop dinners and fun with my friends back home. Speaking of dinners I always host a dinner with a good friend of mine for our closest friends, and well needless to say my group of friends love to each as much as I do! I have been at the CIA for a year and a half now and I have learned so much and my friends get to experience a little more of my experience in cooking. So here we go, the menu:
-Apps:
Citrus tuna tartare with potato chips
Steamed mussels, lemon butter sauce
-Salad:
Frisee w/ apples, bacon lardons, goat cheese
-Main Course:
Salt and pepper crusted bone-in prime Rib au jus
-Accompaniments:
Roasted root vegetables
Ratatouille
Dill and cottage cheese bread
-Desert:
Sweet potato meringue pie

Thats what we like to call maillard reaction.
Needless to say dinner was a success and I have to thank everyone who came and took part in the dinner. Oh and I forgot to mention that it was a bad Christmas sweater party too. tehehe.
